Christmas Cupcake Recipe

Baking was not always my strong point but I do from time to time give it ago, here is a yummy christmas treat, so easy to make for any special guest coming around for parties or for the little ones. This recipe is quick, fun and easy. everyone will love. For me, any cake  would do but a simple cupcake would be better. I promise you will not regret it!


PREP TIME: 10 MINUTES | COOK TIME: 16 MINUTES | DIFFICULTY: EASY


YOU WILL NEED....

200 grams - unsalted butter, softened

1 teaspoon vanilla extract

1 cup brown sugar

3 eggs

½ cups of self-rising flour, sifted

½  cup of milk

1 pack of 24 gold cupcake cases





Method:

Step 1 Preheat oven to 180°C/160°C fan-forced oven. Line muffin or mini-muffin pans with paper cases. 

Step 2 Using an electric mixer, beat butter, vanilla and sugar in a small bowl until light and fluffy. Add eggs, 1 at a time, beating after each addition (mixture will separate at this stage). Transfer mixture to a large bowl. Stir in half the flour. Stir in half the milk. Repeat with remaining flour and milk until combined.

Step 3 Scoop mixture with ice cream scooper, 1 scoop fits in 1 cupcake case perfectly.

Step 4 Bake for 15 to 17 minutes. If using smaller cupcake cases. Bake for 10 to 12 minutes.

Step 5 Stand cakes in pans for 2 minutes. Transfer to a wire rack to cool. 



Whipped cream 


Ingredients:

300ml whipping cream 

1 tablespoon of caster/ confectioners sugar for every 1 cup of cream

2 teaspoon of  vanilla extract for any amount of cream



Method:

Step 1 In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like.


Step 2 Bag into piping bag for cake decoration. Now decorate however you want.
